Leftover Turkey Cheesy Mac Casserole

Maybe you have eaten all the leftover turkey from Thanksgiving? Maybe you have some frozen in the freezer for a rainy day? Maybe you need to gather ideas for the next turkey? Well, this Leftover Turkey Cheesy Mac Casserole works for chicken and turkey it is good either way… or shall I say GREAT!! It is a comfort food as well, as in umm not exactly low calorie, but filling and very yummy or cheesy or yummy?

Leftover Turkey Cheesy Mac Casserole  Use up those Thanksgiving and Christmas Turkey Leftovers in this comfort food casserole!!

 

Ingredients (all ingredients are variable due to amount of turkey or chicken you use) :

  • 2 lbs Leftover Turkey (1-2 lbs depending on family size)
  • 2 cups Leftover Gravy (whatever you have left or Cream of Whatever Soup)
  • 3 cups Milk
  • 1 block Cream Cheese
  • 3-5 cups Cheddar Cheese (we love cheesy here)
  • 1 14 oz package Elbow Macaroni (cook according to package instructions. We like them not quite done for this recipe)
  • 1/4 cup Butter
  • 1/2-3/4 cup flour
  • Salt (to taste)
  • Pepper (to taste)
  • Garlic (to taste)
  • Ritz Crackers crushed (2 sleeves with 3 T butter)

How to Make Leftover Turkey Cheesy Mac Casserole

I neglected to get a picture of the first couple of steps…

First, melt butter in large dutch oven. Now add the flour to make a doughy looking mushy goop. (yep, those are professional family cooking terms there folks)

Stir that and keep it cooking on a low to medium heat. It should start to turn to a nice golden color as it starts to slightly brown. Don’t let it burn!!

Now add your milk to make it more of a gravy type consistency. Stir it in slowly, so the flour and butter goop breaks up and smoothes into the milk.

Now add your leftover gravy, keeping the cooking temperature on low to medium.

Once the gravy is mixed in nice, add your cream cheese.

Once it melts in, you can taste and see how much salt and other spices you need. If this is super thick still, add more milk now!!.

You are now ready to add your cheddar cheese to your gravy mixture.

Get it all gooey and melted and add your turkey.

Once that is all mixed together, add your macaroni.

Now pour it all into your casserole pan. Next, add the crushed crackers mixed with melted butter over the top.

Bake at 350 until bubbly and crackers are slightly browned.

We like to serve this with sliced bread, green beans and carrot sticks. For dessert we had homemade apple pie and ice cream. Sorry, no pictures of all that, as well, baby was needing me when I was taking my pictures and I rushed around to grab them. Cuz… babies don’t wait. :)

As I mentioned yesterday, our baby had oral surgery on Monday. I was worn out and had nothing for our family to for supper. So, we swung through the grocery store on our way home and grabbed a rotisserie chicken. I deboned it and we used it to make a quick supper. I had some frozen cheesy goop from above in our freezer. (I made a huge batch a few weeks ago, and froze the extras)

My family’s favorite recipes that we have tried are the Pico De Gallo, and the Arroz Imperial. My husband LOVES the Pico De Gallo, he asks me for it almost daily. I am now making triple batches of it, and it might just last two days. I also took it to this week’s church pot luck and my bowl was empty, even with the HOT sign.

When my son Isaiah had his tonsils out ten days ago, he asked for chicken. The Arroz Imperial being a mild dish from Cuba was a big hit.

Weight Loss Journey 2013 Update for April

Last month, I am sure, even though I tried to keep my weight loss post positive, you could tell I was frustrated with my Weight Loss Journey 2013, that whole 3 month plateau really was causing me to want to just give up, but wow, what a difference a month makes!

Weight Loss Success

My weight loss this month is nothing huge, but it has really booted my confidence in continuing on and not giving up. This weight loss journey is tough, especially when you have people you love who want your homemade pies a couple times a week, and love your homemade ice cream and believe you should have an endless supply on hand. Have you ever made homemade ice cream and not licked the paddle? See, tough, but I am doing good with these things. In fact, I do allow myself a small lick and a sliver of pie, and the more I allow, the less I want it…well, except for the ice cream, but man, that is in my genes…As in I inherited the gene that says, ice cream is a food group and is good for you. Oh, you haven’t heard of it? Really? I bet, if my half sister or “oldest daughter” reads this, they can tell you all about that gene. (“oldest daughter” refers to my best friend’s daughter, Sarah, who happens to be a 20 year old gal that will worm her way into your heart before you know it, even if through your children)

I do cook almost everything from scratch. Including our sweets. I am getting better at making sweets with stevia, rather than sugar or honey. However, I need to find a good cookbook that has been tested using stevia. I am also looking at books that use coconut flour instead of all wheat too. I do grind my own wheat, however, I think for some things using different flours would be good.

However, seriously, I have lost five pounds this month. FIVE, after not losing a thing for over THREE months!! I would like to see more than five come on through April, but as long as I am less by May 1, or at least the same weigh, I will be happy.

Yep, I am down to 187 pounds, my goal is still a long way away, but every pound is one closer to my goal!!

God and Your Weight Loss

I find praying first thing in the morning to have wise choices in what I eat helps me to stay on track the entire day. God wants us to be healthy, and if we call upon Him, He will help us get there.

I am glad I decided to take pictures for this journey, These pictures have really helped me to see the progress. Without seeing it, I am not sure I could keep it up.

Christmas Shortbread Cookies~Three Ingredients

Do you love a simple, easy, fun cookie to make during the Christmas baking season? Well, this is the best cookie we make, it is easy, fun and only take s 3 ingredients. When I do frost these, I just make a basic butter cream frosting. We don’t always frost them. Many times we just use a few sprinkles.

Ingredients:

  • 2 cups butter
  • 1 cup sugar
  • 4 cups all-purpose flour

That’s it!!

Now, cream the butter and sugar together, add the flour and mix well. Roll out onto floured surface with rolling pin, to 1/4 inch thickness. Now, I let the kiddos have at it, with cookie cutters. Arrange on ungreased baking sheet, prick the top. Bake at 300 for 25-30 minutes. Sprinkle while warm or frost when cooled. Makes about 4 dozen. Simple huh?

 

Planning for the From Scratch Holiday Meal

Are you hosting a Holiday Meal in your home? Do you want to make it healthier?

 

I have been hosting most all of our holiday meals in our home for several years. Every year, I get a little more healthier and from scratch. However, to make the entire meal from scratch, it takes a little planning to have some of the ingredients ready for the big cooking day.

Menu Planning

For our family gathering, I will fix the Turkey, bread, stuffing, gravy and pies. I ask the rest of the family to round out the meal. Winking smile So, we will discuss fixing the things I am working on right now!

Grab a sheet of paper, and write down what you will be fixing, next to each item, write the cookbook and page number. Next get your grocery list started. You will want to shop a week or more before the meal to avoid the crowds. Believe me, the day before is NOT fun, you are literally putting your life at risk…people are crazy that day.

Extra Ingredients Prep

Let’s face it bread cubes for stuffing aren’t instant..neither is chicken broth for that stuffing…And the Turkey, well, thawing it can take several days, clean out the fridge and shove it in there to thaw.

Ok, so now you have done step one…start thawing the turkey. If you are a little late, take the wrapping off and submerge in cool water, and change the water several times a day until thawed. Winking smile Be sure to get to Thawing your Turkey five to six days before the meal to be sure it is ready to be cooked!

Please note, to be sure to put the turkey on a platter or other container to catch escaping juices, so you don’t have to reclean your fridge. Winking smile Heading to do that NOW!!

 

Stuffing:

If you are making this from scratch, you will need chicken broth and bread cubes. I planned a meal last week to use chicken and saved my broth. I made bread and cut 1.5 loaves of my bread into cubes. I then put them in a single layer on a large cookie sheet in the oven at 250-300 for periods of 10 minutes (about 30-40 minutes total) until thoroughly dry. After every 10 minutes, I stirred them a bit to help rotate them.

I will make the pies and cranberry orange bread on Wednesday before Thanksgiving or the day before whatever holiday we are hosting. I prep the Turkey in an oven bag the night before too…

Funny story

If you buy a large, heavy turkey, please note, the seam at the bottom of the bag will not old the turkey when your husband plops it in the bag…it WILL hit the floor, just before your bottom jaw does. Winking smile

So, plop that turkey in the bag over the table with the bottom of that bag on the table. Winking smile

The stuffing will be made in the crockpot using one of the handy dandy new plastic crockpot liners. Winking smile Hey, who wants to be left in the kitchen scrubbing a crockpot free of near cement type of no longer smells good stuffing because you are now so stuffed yourself? Winking smile

If I were making the veggies and salads, I would have them either put together the day before, or ready to be put together in less than five minutes the day of.

Now, that you have planned, prepped and you had better have done your shopping, the holiday time with friends and family can be relaxing and enjoyable. Oh, and don’t forget the paper plates, as well, it is more important to me to spend time with your company than it is to get out those fancy dishes and be stuck in the kitchen any longer than ya have to. Keeping Track of Whose Cup is Whose…

Several months ago I read about Drinkbands.  I LOVE the idea, but being who I am, could not really see myself spending the money on them, $12,50 for nine different colors.  I know my children too, and realize they could likely get lost in little to no time.   Hey, being real here with toddlers in the house who love to play make believe at all times.  

Over time, the idea kept coming back to me, over and over again… I would walk into the kitchen and see ten to fifteen cups on the table and only have eight people in the house and have no clue whose cup was whose, I knew I needed to figure something out.

And then I had a light bulb moment…

Remember those “Jelly Bracelets” from the 80s?  You know, the ones that are coming back into style? 

Well, they work on many of our cups.  They are cheap…for 40 bracelets in 10 different colors, I paid $6.  I found them at our local Dollar General.  Bingo, they work on our child size cups, and my children are loving them.

If we have company with other littles in the house, I will combine colors on one cup, so they know what cup is theirs.  

Ground Beef (Meat) Recipe Link Up

I can’t be the only one with lots of ground beef.  However, if you are like me, you run out of ways to make your ground beef or meat into a meal your family is not tired of.

A New Season, A New Routine…

After a few weeks of chaotic attempts of keeping with our summer routine/schedule, I realized it wasn’t going to work.  Really not much has changed from our summer, other than I am expecting more indoor work and more school.  However, adding or taking anything out of a routine and not adjusting it, creates utter chaos in a large family…maybe a small family, but I wouldn’t know as we were never small long enough to find out.

We aren’t really into our full school routine yet either.  We still have quite a bit of garden harvest to deal with.  Over the next few days we will be doing 2.5 gallons of jalapeno peppers. Exactly what am I doing?  Salsa Verde and Hot Pepper Jelly. 

Last week we did do the Great Clothing Switch out…IN ONE DAY!!  Yes, switched out clothes for eight people in one day…We ROCKED it!!  We had to also go shopping and get a few things for our oldest two…

Over the last several weeks though, we haven’t gotten much accomplished on the home front, from school to chores…There’s been quite a bit of excitement causing a bit of this, and no I am not pregnant.   Hopefully more to come on that in a few weeks.

This past week, besides canning, we have had a few sick kiddos.  If more than one is sick, and it is the younger crowd, it is likely we won’t get much into the books.  It is also likely the house will smell like Essential Oils as I disinfect everything.  The floors will likely be in need of a good vacuuming, and the laundry will need folded, however, most things go into survival mode.  Thus again creating a need for order when all is going well.

My philosophy is, if you can keep up on the dailies most days then the days you don’t get to them, won’t be so bad.  Therefore, I need a daily routine, to help us keep up.

I have two chore charts right now.  One with Daily Chores and One with Weekly Chores.  Saturday is still our big cleaning day. 

This center contains, our calendar, both PDFs from above, a place for business bills, personal bills, tax info and bank info, a place from grocery lists, and a place for notes.  This item is from Thirty-One Gifts, and hangs on our refrigerator next to our main door that we use to come in and out of the house.

Why do I have to change chore routines so often?  I think my children get bored with them?  Change of seasons in our lives?  What ever the reason, the changes help us stay on top of things around here and keep from  living a life of chaos.

Training the Proverbs 31 to be Daughter~31 Thursdays

I often worry am I doing enough?  But, this week, has proven that my oldest daughter, is working towards being much more ready than I ever was.

She helps cook, clean and is my can you do this for me, go to gal.  She helps guide her sisters to help her too.

This is the cake she made her little brother for his birthday, by herself!!

I have used these to help guide me, but she is beyond the eleven year old chores, at the age of nearly ten.  Why? That is just her.

If you make chores fun, in some way, (which I will talk more about in another post), your children really learn to enjoy the work.

Have your children help cook, bake, clean and organize, maybe one of them will be like my Lora.

Chore Charts and List, They can either make or break the chaos…

I have tried so many different chore ideas, and they all work for a bit and then, whamo, we are right back where we began. It drives me bonkers, it makes me mad, it creates a terrible non peaceful environment that will literally push me so close to the edge of insanity. However, as with much of our life, I have to adapt and change how we do things, and chore lists and charts are not any different.

I have been color coding our children for some time. Well, now I have set out 31 days of color coded charts. This means there are 3 charts with 31 days, and chores listed by color for each day on each chart. Each color represents a different child.

We have a chart for:

  • Kitchen Work
  • Around the Home

  • Animal Care

On each day of the chart I have made a list of the chores that need to be done, each day is just 1-31, so this rotates monthly. After I printed the charts, I then highlighted each chore with and assigned the different colors to different children. The charts are posted on our refrigerator door.

We have been using these charts since the beginning of March. They have worked most of the time, but if a child is out helping dad, the chores tend to become mine, or I reassign them. These charts are laminated, so when a change is needs, I use a wet erase marker to add a star next to the lucky child who gets to help pick up the missing child’s chores, which are split between 3-5 other children and myself.

The benefit of this system, is there is no question whose day it is to do what, at least when it comes to daily chores. Many of the chores listed are done several times a day. At this time, I haven’t been using a check off system other than me going through the house and making sure things are done each day.

As my family has grown, gotten older and our lives have gotten busier with me working a bit, I have had to create something that even my husband can pick up and learn easily, even if I am away from home for a few days. He used this chart while I was at the Teach Them Diligently Convention.

Teach a good work ethic in your children from an early age is going to benefit them for a life time.

Home Ec Days not Homeschool?

I read an article the other day that has me a bit disgruntled. Sorry, I didn’t save the link as I just clicked out of it. I am also not going to say that everything in that article was bad, but, it did leave a bad taste in my mouth and several others. It implied that those of us taking days to teach home ec, or to sew or clean and calling it home ec days are being irresponsible. I disagree. I do know, that not everyone who is homeschooling is being responsible, but this article seems to really talk down on those trying to home educate their children through real life experience that even take place at home.

First, if you have girls and their goal is to grow up, get married and have children, Home Ec, is going to be their life. There is much more to home economics then what people even think about. In fact, if I tried I could probably build a complete curriculum, from math, to science to reading and history out of home economic subjects.

When I got married, I knew how to sew, and bake a few things. However, I was greatly lacking. My nine year old daughter can fix a complete meal and make her six year old brother’s birthday cake from scratch this year, by herself with three of her younger siblings, with fresh ground flour!!

Let’s start in the kitchen. You learn about health and nutrition, measuring (math), cleaning (science), chemicals (science), you can further it, by adding in some history. Buying groceries, staying in budget and menu planning all count.

How did they cook or eat on the Mayflower? Pioneers? Civil War? Ancient Times and more. You start reading about these things, so now you have covered history, reading, reading comprehension, vocabulary, and probably spelling.

Now, your children start reenacting these lessons, and you have covered drama. Now, you ask them to write about it and take some pictures, you have covered art and language arts. If you are a cool techy mom, you have them write a blog post and post it on your blog. So, tell me again how having a day in the kitchen can’t be a good education?

Let’s talk about cleaning the house and organizing. Seriously if you have watched Hoarders, I suspect you and I both know that we all need a little education in organization. From your oldest to your youngest, we all need to learn to clean, and organize. The youngest can help pick up and sort, by color, shape and type (math readiness). The olders can measure to find places for things (math), get down on their knees and scrub and so forth. They will learn not to mix cleaning chemicals (science). If you need shelves, they can research a pattern to use (research skills=language arts and reading), buy the supplies (math), read and follow the instructions to build the shelves(reading) and then build them. (physics) They can then research the tools used now and throughout history.

Should I dig deeper? Do get the idea? Wondering if children really will dig deeper and want to know the history of how we got to where we are as far as home ec? Why yes they do.

Education, as in REAL education, the stuff children remember for the rest of their lives doesn’t NORMALLY happen from a textbook. I remember the cover of my 7th grad history book, but…I don’t remember what I learned from it. I remember being frustrated and not liking the teacher. I remember what happened if you got in trouble in class. I remember that if you could do so many push ups of sit ups, you got an A even if you didn’t do any of the work.

Do you want me to break down how taking a couple of days off the books to sew is still educational?

Everyone needs to know a few basics from sewing on a button, to stitching a small tear together. If you learn more, you will learn to read a pattern, about different fabrics, maintenance of the machine, picking out a pattern, following instructions, measuring, counting, adding and more. You can study why sewing was a must have skill over the years, and more.

Now, I think the responsible thing to do as far as recording this time, is to journal it, or list the skills learned or practiced in a special section of your record books called Life Skills. This helps cover the academic area of taking these days. I know some have time to include these projects in their homeschool day and get the bookwork done. It doesn’t work for me, I get in that “zone” and need to stay there, or it won’t get done. So, for our family, we take a couple of days to do these projects. Many times these days are taken during Christmas and Spring breaks.

These hands on projects last so much longer than a workbook, unless it is food. lol But, really, our children hang on to the real life lessons learned and carry them with them for the rest of their lives. Remember many of these Home Ec Skills are treasured virtues in Proverbs 31 and Titus 2, many of which have been lost in today’s society. Why shouldn’t this be part of their home education?

On Your Mark, Get Set, Go…Farming is in gear…School is…

Out of the books and in the field.  I have tried several years, to homeschool through the summer…it doesn’t work on our farm.  We are up all hours of the day, lose our routines, and just pretty much have to be ready to head here, or there, or anywhere at a moments notice.

This doesn’t mean that learning stops.  In fact, my boys are learning how to work on different equipment, from tractors to balers, to rototillers and combines.  The learn about soil tests, pesticides, herbicides and fungicides.  Don’t’ tell me they are all bad, we only use when we have to, to be able to make a crop worth more, than what we have put into it.

We will also plant a garden, where they learn a ton.  In fact, they do a lot of the work in our garden.

My girls are learning to cook…we are baking bread, cookies, salads, and more.  I am trying to get them ready for the day, that I may be back in the field, and that they would be able to get a meal ready on their own, while keeping a couple of younger siblings.

So, as you can see, school isn’t stopping, just the book school.  There will be times we pull books out just to keep refreshed.

Recipe~Double Mocha Frozen Cappuccino

Ok, so I really dislike coffee, but LOVE cappuccino. I LOVE Starbucks, but can’t afford it and well the closest one is about 45 miles. That is probably a good thing. However, I have figured out, out of desperation how to make something similar at home for a fraction of the cost.

Ingredients:

  • Milk
  • Cappuccino Mix
  • Ice Cream
  • Coco Powder

Now, as you probably have figured out with my recipes, I am a dump, pour, and taste gal…the below “measurements” are an estimate.

1 cup milk

2 T cappuccino Mix

2 scoops Ice Cream

1 tsp coco powder.

Hey, I didn’t say it was healthy.

I like to add just about a teaspoon of instant coffee too.

Now, blend together, and serve in your favorite cup. Hide away from anyone who may think you ought to share.

Cranberry Lettuce Salad~Recipe

Looking for a way to use all those spring greens and add some great color and zip to your salad?  Here is a recipe that was born from a visit with my cousin in North Carolina.

This recipe is easy enough for all your children to help.  My three and four year olds loved tearing the lettuce, dumping in the cranberries, and running the salad spinner.  My five and six year olds learned to peal carrots, and my olders helped with the rest of it.

The picture below is of one we just made, but didn’t have all the extras such as the oranges and cucumbers.  It gives you an idea that this is a super adaptable recipe to meet your family’s needs.

Cranberry Lettuce Salad

2-3 heads of Romaine Lettuce-torn for salad

Other greens you can get or have on hand (spinach, other lettuce etc.)

Diced bell peppers red, yellow, green

Slivered carrots

Diced onions

Cucumber

Your Other Favorite Salad goods

Now for the kick or zip or zap…

Add a bag of dried cranberries

a small can of mandarin oranges

Dressing

In a jar mix all of the following:

1-2 Tablespoons of Olive Oil

1/2 cup of Red Wine Vinegar

1/4 to 1/2 cup Cranberry Juice (not cocktail)

1/2 tsp. basil

1/4 tsp. garlic powder or fresh if available

Sugar to taste—start with a tablespoon or so.

Salt and pepper to taste start with 1/4 tsp. or less.

Shake together and pour over salad just before serving

Other yummiest to add to your salad?  Crumbled bacon, croutons, sunflower seeds and such.

I served this salad with Lasagna and Garlic Bread.  

Frugal Grocery Shopping Six Weeks at a Time

Seems every mom of more than one or two children really dislikes grocery shopping. I don’t think it is so much a matter of taking our children with us, but the time and money involved.

 

I would like to say that grocery shopping is fun, but it isn’t. As prices increase and the tummies grow and become bottomless, grocery shopping is becoming a little more stressful. There is hope though, God will provide and at times it is at the last minute.

Matthew 6:31-33

31 Therefore take no thought, saying, What shall we eat? or, What shall we drink? or, Wherewithal shall we be clothed?32 (For after all these things do the Gentiles seek:) for your heavenly Father knoweth that ye have need of all these things.33 But seek ye first the kingdom of God, and his righteousness; and all these things shall be added unto you.

First, I do not do your normal menu plan. My menu plan consist of a list of meals that our family enjoys that our fairly easy to make in a short amount of time. On my list, I have a place to write out what we will need. This allows me to be able to have flexibility. As I use up ingredients for different items on my list, I put an X along side it, letting me know I do not have the stuff to make it. We rotate through these meals and add a few others. Each page is for a week’s worth of meals. Winking smile I make out six of these for our rotation.

I cook nearly everything from scratch, this saves a ton of money. I buy a lot of our flour, sugar, rice and such in bulk at an area bulk food store. All our spices are purchased in bulk too.

We purchase ALL beef from a Mennonite farmer who only raises grass fed beef, same with chicken, only we get it from a friend. Grass fed beef is typically more expensive to purchase, but you do get more for your dollar, as there is not any fat to drain and the fat there is, is the good fats. Also, it is healthier as it is not loaded with growth hormones like so much of the grocery store meat is. In the next year or two we will be eating our own beef, as we now have a beef cow herd.

We avoid nearly all processed foods to avoid high fructose corn syrup, coloring, additives preservatives and such. We have found that we get full faster with healthy foods. We have more energy and feel better too.

We grow a garden for nearly all of our salsa, pickles, onions, green beans, bell peppers, and such. We only buy carrots and salad for most of the winter months. If we run out of our garden veggies, we do buy at the store. This past year we had a horrible drought and well…got VERY little from our garden. So, we have had to purchase veggies this year.

 

We buy fresh fruits when they are in season. Right now, we are going through about 3 pounds of oranges a day. We eat fruits for dessert most meals and have fruits for snacks. Carrot sticks are also a snack staple. Lots of snacks are apples and peanut butter…natural peanut butter those a little more to buy, is much better for you.

We purchase our yogurt, but I buy the Greek yogurt that has at least 19 g of protein per serving. There is no high fructose corn syrup in it. I hope to someday make our own yogurt. Winking smile

I make all of our gravy and cream soups. This saves us a ton. All leftover gravy, whether it is turkey, chicken or beef gets turned into a creamed soup. My family can’t stand canned cream soups in our casseroles anymore. I freeze this and keep it ready for all casseroles.

Milk: We do not drink much milk. I use it in cooking a lot. We also try not to use milk at all when our friend’s cow is not being milked. A few of our children have health issues that are exaggerated with store bought milk. They can have all the raw milk they want though. and we are able to get it locally. At some point, I do want to get our own cow, and so does my husband.

I don’t use many coupons, as most are for processed foods. I do use a few of the store issued coupons. I use them for non food items mostly.

I make a LOT of casseroles. They last a little longer and feed more. I then add a few sides, rice, potatoes and such.

The big thing, is not to waste the food you buy. I only buy flour, canned goods and such for our six week at a time shopping. We buy fresh produce every few days. I watch store sales too, which helps.

I buy our meat every six weeks and typically get about 50 pounds of beef, 20 lbs of chicken and 8 lbs of fish (Tilapia). Most of the time, this does last a bit longer then six weeks.

During a good summer, (we have a steady summer income and very little during the winter), I stock our freezer full. This helps us have a better winter.

In my home management binder, I have a column along the sides for each day that has a place for me to write out a short list of things we need. At the end of that day, I add these to my master grocery list. This makes creating a grocery list fairly easy.

If I have a coupon or there is a sale for an item, I also add a c or s next to the item. This helps me know whether I need to ask my hubby to run and grab something that is on sale on one of his parts runs. We don’t have a big grocery store locally. ;)

The Homeschool Mother’s Journal~Summer Edition

In my life this week…

I have been a sewing maniac…I made two modest swimsuits, one for myself and one for my oldest daughter.

I also started water aerobics with some local gals in the evenings on Tuesday, Wednesday, and Thursdays.  I started Thursday, so I can rest up for Tuesdays class.

In our homeschool this week…

I have not felt that the two weeks of lesson plans I have written out will work, there is too much each days, and all that will happen is the whole family will be overwhelmed, frustrated, and grouchy.  Learning will not take place, if I try to use our current plans.

Therefore, I am going to rewrite my homeschool lesson plans.

My friend Amy at Raising Arrows, who will celebrate her daughter Emily’s fourth birthday with out her…She went to heaven nearly three and a half years ago.  I remember the day Emily was born, her proud grandma called me and told me.  She was a beautiful little firecracker, that I feel honored to be able to have held a few short times.  The last time I saw her in real life, she was still on the ventilator, and many monitors.  I will never forget the phone call I got, on February 10, 2008 telling me Emily had gone to be with Jesus…I cried, sobbed and lashed out at Jesus for my dear friend’s misery.
